Chickpea Salad
This chickpea salad is the perfect light meal. It’s easy to throw together on days when you are too hot to cook, and makes a great lunch or dinner option. The best thing about this chickpea salad is that there is no cooking involved at all, but there is a great protein hit to fill everyone up.
Chickpeas (or you might call them garbanzo beans?) have loads of protein, fibre and lots of other goodies so they are perfect in this vegetarian meal. Plus you can use them straight out of the can for this recipe, just give them a rinse and they are ready to go. So easy!
The dressing for this salad is super easy to make too. You can make it from scratch, or you could use your favorite store bought dressing.
You can easily vary the salad ingredients in this recipe. Change them up to add whatever you like best, or whatever you have in the fridge. Adding some salad onion or capsicum would be delicious, if I you don’t have kids who hate them like I do! And if we’d had any parsley growing in the garden I would had added some of that too, but whatever herbs you choose make sure they are fresh.
This Chickpea Salad is the perfect dinner on a hot summers night, eaten in flat breads with some yogurt dip! Or eat it on it’s own as a great lunch option.

Indoor Camping
Head to the great indoors for an easy summer camp out—we mean, camp in!
What you will need:
Large blankets or sheets and sleeping bags (if you have them)
Flashlights
S’more ingredients (marshmallows, graham crackers, and CHOCOLATE)
A good adventure book to read aloud by flashlight
What to do:
Make a comfy tent
Lots of pillows and blankets. Spread the large blankets or sheets between the backs of two couches, several chairs or hang over a table so the edges touch the ground.
Make S’mores (see below)
Make memories
When it gets dark, use the flashlight to make different shadow puppets on the wall, enjoy your S’mores, read camping books by flashlight, and snuggle in your sleeping bags. Maybe even enjoy a ghost story or two!
To make the S’mores, you can either roast the marshmallows over your gas stovetop or cook them in the microwave (but be careful that you don’t overheat, they will explode!).
Place 1 square graham cracker on a paper towel.
Top with chocolate and a marshmallow.
Microwave on high for 15 seconds or until the marshmallow puffs.
Remove from the microwave and cover with another square graham cracker.
